Ingredients:
1/3 cup melted coconut oil
1/3 cup sugar
1 egg
1 tsp. vanilla extract
1/4 tsp. almond extract
1 1/2 cups almond flour
3 tb. coconut flour
1/4 tsp. baking soda
1/4 tsp. salt
¼ cup sprinkles
For vanilla buttercream:
4 tb. butter
3/4 cup powdered sugar
1 1/2 tsp. vanilla extract
1 tb. sprinkles
Recipe:
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. In a large bowl, mix together coconut oil, sugar, egg, vanilla, and almond extract until smooth.
3. Add almond flour, coconut flour, baking soda, salt, and ¼ cup sprinkles; mix until dough forms.
4. Roll dough into golf ball-sized balls and place on the prepared baking sheet. Flatten each ball to ¼ inch thickness.
5. Bake for 10 minutes, then cool on the baking sheet for 6 minutes before transferring to a wire rack.
