Recipe of Honey and Curry Chicken With Vegetables as a delightful and aromatic dish combining sweet honey and savory curry flavors. This hearty meal features tender chicken and a medley of vegetables, making it perfect for a comforting dinner.

Ingredients:

1.5 lbs chicken thighs, boneless and skinless
2 tbsp honey
2 tbsp curry powder
1 cup carrots, sliced
1 cup bell peppers, chopped
1 cup broccoli florets
1 onion, chopped
3 cloves garlic, minced
2 tbsp olive oil
1 cup chicken broth
salt and pepper, to taste

Recipe:

Preheat the oven to 375°F.
In a small bowl, mix the honey and curry powder.
Rub the honey and curry mixture all over the chicken thighs.
Heat olive oil in a large oven-safe skillet over medium heat. Add the chicken thighs and sear until golden brown on both sides.
Remove the chicken from the skillet and set aside. Add the onion and garlic to the skillet and sauté until softened.
Add the carrots, bell peppers, and broccoli to the skillet and cook for a few minutes until they start to soften.
Pour in the chicken broth and stir to combine.
Return the chicken thighs to the skillet and place it in the oven. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
Season with salt and pepper to taste before serving.
