Cooking Time:
1 hour
Ingredients:
1 lb ground beef
1 cup pumpkin puree
1/2 cup breadcrumbs
1 egg
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
salt and pepper, to taste
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 can (14 oz) coconut milk
2 tbsp curry powder
1 tsp ground turmeric
1 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp red pepper flakes (optional)
fresh cilantro, for garnish
Recipe:
Preheat your oven to 375°F.
In a large bowl, combine the ground beef, pumpkin puree, breadcrumbs, egg, ground cinnamon, ground nutmeg, salt, and pepper. Mix until well combined.
Shape the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through.
While the meatballs are baking, heat olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic, sautéing until soft and fragrant.
Stir in the curry powder, ground turmeric, ground cumin, ground coriander, and red pepper flakes, cooking for 1-2 minutes until the spices are fragrant.
Pour in the coconut milk, stirring to combine the spices with the milk. Bring the mixture to a simmer.
Once the meatballs are cooked, add them to the skillet with the coconut curry sauce. Simmer the meatballs in the sauce for 10 minutes, allowing the flavors to meld.
Serve the meatballs hot, garnished with fresh cilantro.
