Recipe of Cheddar and Broccoli Cream Soup, as a comforting and creamy soup that combines the sharp, rich flavor of cheddar cheese with the freshness of broccoli. Ideal for a cozy meal on a chilly day.

Ingredients:

2 cups broccoli florets
1 cup shredded cheddar cheese
1/2 cup onion, diced
2 cloves garlic, minced
2 cups vegetable broth
1 cup milk
2 tbsp butter
2 tbsp all-purpose flour
salt and pepper, to taste

Recipe:

In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.
Stir in the flour and cook for 1-2 minutes to create a roux.
Gradually add the vegetable broth, stirring constantly until the mixture thickens.
Add the broccoli florets and cook for about 10 minutes, or until the broccoli is tender.
Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
Return the soup to the pot, and stir in the milk and shredded cheddar cheese. Heat until the cheese is melted and the soup is heated through.
Season with salt and pepper to taste. Serve warm.
