Recipe of Vegan Pasta Salad, as a refreshing and nutritious dish that combines pasta with cherry tomatoes, crisp lettuce, and a tangy vinaigrette. It’s perfect for a light lunch or as a side dish for gatherings, offering a balance of flavors and textures that everyone will enjoy.

30 minutes

Ingredients:

8 oz (225 g) pasta (such as penne or rotini)
1 cup cherry tomatoes, halved
1 cup lettuce, chopped
½ cup cucumber, diced
¼ cup red onion, thinly sliced
¼ cup black olives, sliced
¼ cup fresh basil leaves, chopped
2 tbsp olive oil
1 tbsp red wine vinegar
1 tbsp lemon juice
1 tsp Dijon mustard
1 clove garlic, minced
salt and pepper to taste

Recipe:

Cook the pasta according to the package instructions. Drain and rinse under cold water to cool.
In a large bowl, combine the cooked pasta, cherry tomatoes, lettuce, cucumber, red onion, black olives, and fresh basil.
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, and minced garlic. Season with salt and pepper to taste.
Pour the dressing over the pasta salad and toss gently to combine.
Chill in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
