Ingredients:
4 cups corn kernels (fresh or frozen)
2 tbsp unsalted butter
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy cream
salt and pepper to taste
fresh parsley for garnish
Recipe:
In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.
Stir in the corn kernels, and cook for another 3 minutes.
Pour in the broth, and bring the mixture to a boil. Reduce the heat and let it simmer for 10-15 minutes.
Use an immersion blender to purée the soup until smooth, or transfer it to a blender in batches.
Stir in the heavy cream, and season with salt and pepper to taste.
Heat the soup gently, making sure not to bring it to a boil after adding the cream.
Serve hot, garnished with fresh parsley.
