Try out this delicious blend of creamy chocolate, sweet maple syrup, and aromatic spices in our Zucchini and Chocolate Baked Oatmeal. With shredded zucchini for moisture and a chocolate touch of sweetness, each bite is a perfect mix of flavors and textures. Baked to perfection, it’s an easy yet tasty choice for a satisfying breakfast or a guilt-free dessert.

Cooking time:

1/2 cup natural creamy chocolate
1 tablespoon pure maple syrup or honey
1 large egg, slightly beaten
1 teaspoon vanilla extract
1 1/3 cups unsweetened almond milk
1 1/2 cups oats
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 cup shredded zucchini that’s been squeezed of excess moisture
1/4 cup mini chocolate chips (optional, for decoration on top)

1. Preheat the oven to 350°F and grease an 8×8 inch baking pan.
2. In a large bowl, whisk together creamy chocolate, maple syrup, egg, vanilla, and almond milk until smooth.
3. Add in oats, cinnamon, baking powder, nutmeg, salt.
4. Gently mix in shredded zucchini (squeezed of excess moisture).
5. Pour the mixture into the prepared pan, ensuring even distribution. Sprinkle chocolate chips on top (optional).
6. Bake for 30 minutes until the oatmeal is set and lightly golden.
