Cooking Time:
1 hour 20 minutes

Ingredients:

1 1/2 cups all-purpose flour
1 cup shelled pistachios, finely ground
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup whole milk
1 cup fresh strawberries, chopped

For Lemon Frosting:

1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tbsp lemon juice
1 tsp lemon zest
1/4 tsp vanilla extract

Recipe:

Preheat the oven to 350°F and grease a 9-inch round cake pan.
In a medium bowl, whisk together the flour, ground pistachios, baking powder, and salt.
In a separate large bowl, beat the softened butter and sugar until light and fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet mixture, alternating with milk, starting and ending with the dry ingredients. Mix until just combined.
Gently fold in the chopped strawberries, being careful not to overmix.
Pour the batter into the prepared cake pan and spread evenly. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely before frosting.

For the Lemon Frosting:

In a large bowl, beat the softened butter until creamy.
Gradually add the powdered sugar, lemon juice, lemon zest, and vanilla extract, beating on low speed until smooth and fluffy.
Once the cake has cooled, spread the lemon frosting evenly over the top. Garnish with additional chopped pistachios or strawberry slices if desired.
