Interesting fact: Bollinger is the only major champagne house that still uses oak barrels for the aging of all its wines, including base cuvées. This tradition, which has almost disappeared in the industry, gives their champagne a unique structure and depth. Each barrel is used for no more than 5 years to prevent the wine from absorbing too much wood, and the coopers work exclusively with oak from the Argonne forest, considered the best for aging champagne.
