Ingredients:
1 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tbsp curry powder
1 tsp cumin
1/2 tsp cayenne pepper (optional)
1 can (14 oz) coconut milk
1 can (15 oz) chickpeas, drained and rinsed
1 small head of cauliflower, cut into florets
1 can (14 oz) diced tomatoes
1 tsp salt
1/2 tsp black pepper
fresh cilantro, for garnish
cooked rice, for serving
Recipe:
Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
Add the minced garlic, curry powder, cumin, and cayenne pepper (if using). Sauté for another 2 minutes until fragrant.
Stir in the coconut milk, chickpeas, cauliflower florets, diced tomatoes, salt, and black pepper. Bring the mixture to a boil.
Reduce the heat to low, cover, and let simmer for 25-30 minutes, or until the cauliflower is tender.
Adjust seasoning with more salt and pepper if needed.
