Ingredients:
1 sheet puff pastry, thawed
3 medium tomatoes, thinly sliced
1/4 cup grated Parmesan cheese
1/4 cup fresh basil leaves, chopped
2 tbsp olive oil
salt and pepper, to taste
1 egg, beaten (for egg wash)
Recipe:
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Roll out the puff pastry sheet on a lightly floured surface. Cut the sheet into 6 equal rectangles.
Place the pastry rectangles on the prepared baking sheet. Use a knife to lightly score a border around each rectangle, about 1/2 inch from the edge.
Arrange the tomato slices evenly on top of each pastry rectangle.
Drizzle the tomatoes with olive oil, and season with salt and pepper. Sprinkle with grated Parmesan cheese.
Brush the edges of the pastry with the beaten egg.
Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
