Recipe of Kale Salad With Sweet Potato, as a nutritious and flavorful dish combining the earthiness of kale with the sweetness of roasted sweet potatoes. This vibrant salad is perfect as a light meal or a side dish.

Ingredients:

1 large sweet potato
4 cups kale, chopped
2 tbsp olive oil
1/4 cup dried cranberries
1/4 cup walnuts, chopped
1/4 cup feta cheese, crumbled
1 tbsp balsamic vinegar
1 tbsp honey
salt, to taste
black pepper, to taste

Recipe:

Preheat the oven to 400°F.
Peel and dice the sweet potato into small cubes. Toss with 1 tbsp of olive oil, salt, and pepper.
Spread the sweet potato cubes on a baking sheet and roast for 25-30 minutes, until tender and slightly caramelized.
While the sweet potato is roasting, prepare the kale. Remove the tough stems and chop the leaves into bite-sized pieces.
In a large bowl, massage the chopped kale with the remaining 1 tbsp of olive oil until the leaves are softened.
Add the roasted sweet potato, dried cranberries, walnuts, and feta cheese to the kale.
In a small bowl, whisk together the balsamic vinegar and honey. Pour over the salad and toss to combine.
Season with additional salt and black pepper to taste.
Serve immediately or chill for 10-15 minutes before serving.
