Cooking time:
30 minutes
Ingredients:
1 cup sweetened condensed milk
1/2 cup salted caramel sauce
2 cups shredded coconut, plus extra for rolling
1 tsp vanilla extract
1/4 tsp sea salt
1/4 cup unsalted butter
1/2 cup crushed graham crackers or digestive biscuits
Recipe:
In a medium saucepan, combine the sweetened condensed milk, salted caramel sauce, unsalted butter, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan, about 10 minutes.
Remove the mixture from the heat and stir in the shredded coconut, crushed graham crackers, and sea salt until well combined.
Allow the mixture to cool slightly, then use your hands to form small balls, about 1 inch (2.5 cm) in diameter.
Roll each ball in additional shredded coconut to coat.
Place the coconut balls on a baking sheet lined with parchment paper and refrigerate for at least 15 minutes to firm up before serving.
Store the coconut balls in an airtight container in the refrigerator for up to one week.
