Recipe of the tasty chickpea and lentil stew with spices, as a hearty and nutritious dish, perfect for cozy meals. This stew combines protein-packed chickpeas and lentils with a rich blend of spices, making it both comforting and flavorful. Ideal for cold days or as a satisfying dinner.

Cooking time:
1 hour 15 minutes

Ingredients:

1 cup dried chickpeas or 1 can chickpeas, drained and rinsed
1 cup dried lentils, any variety
1 onion, chopped
2 cloves garlic, minced
1 inch piece of ginger, minced
1 can diced tomatoes
4 cups vegetable broth
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground turmeric
1/2 tsp ground paprika
1/4 tsp cayenne pepper (optional)
salt, to taste
black pepper, to taste
2 tbsp olive oil
Fresh cilantro for garnish

Recipe:

If using dried chickpeas, soak them in water overnight. Drain and rinse before using. If using canned chickpeas, drain and rinse them.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and ginger to the pot, and cook for another 2 minutes, stirring frequently.
Stir in the ground cumin, coriander, turmeric, paprika, and cayenne pepper. Cook the spices for 1 minute to release their aromas.
Add the diced tomatoes, chickpeas, lentils, and vegetable broth to the pot. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for about 45 minutes, or until the lentils are tender and the chickpeas are cooked through.
Season the stew with salt and black pepper to taste. Adjust the seasoning as needed.
Garnish the stew with fresh cilantro and serve hot, either on its own or with a side of bread.
