Ingredients:

½ tbsp. olive oil
1 yellow onion, sliced
3 cloves garlic, sliced
1 (28 ounce) can of whole peeled tomatoes
1 (15 ounce) can of coconut milk, reserving 2 tbsp. for drizzling on top
1 tsp. italian seasoning
½ tsp. salt
ground black pepper
fresh basil for decoration

Recipe:
1. Caramelize onions in a large pot over medium heat with olive oil and salt, stirring occasionally until golden brown. Reduce heat, add garlic, and cook for 3 more minutes.
