Ingredients:
1 cup peanut butter
6-7 large dates
1 teaspoon vanilla extract
1 tablespoon chia seeds
1 tablespoon flax seeds
3/4 cup rolled oats
1 dark 70% chocolate bar
sea salt, for sprinkling
Recipe:
1. Soak dates in warm water for 13 minutes, then drain.
2. Blend soaked dates, peanut butter, vanilla extract, chia seeds and flaxseed until smooth. Add oats and pulse. Press mixture into a lined loaf pan.
3. Melt 3 ounces of dark chocolate, pour over the peanut butter layer. Tilt the pan for even coverage.
4. Refrigerate for at least 45 minutes, then cut into 10 squares.
5. Optionally, sprinkle with sea salt. Store covered in the fridge for up to two weeks or freeze for up to 2 months.
