Recipe of the zesty delight of Crispy Lemon Bars, which strike a perfect balance of tartness and sweetness, making it a refreshing treat for any occasion. Easy to make and visually appealing, these bars are sure to impress at your next gathering.

Cooking time:
35 minutes

Ingredients:

1/4 cup butter, melted and cooled
3/4 cup maple syrup
1/4 tsp. almond extract
1 1/2 cups almond flour
3 tbsp. coconut flour
1/4 tsp. salt
zest from 1 lemon
2/3 cup squeezed lemon juice (from 3 lemons)
4 eggs
powdered sugar

Recipe:

1. Preheat your oven to 350°F and line an 8×8 inch pan with parchment paper (avoid using glass).
2. Mix almond flour, coconut flour, salt, butter, maple syrup, and almond extract for the crust. Press into the pan and bake for 14 minutes.
3. Whisk lemon zest, juice, maple syrup, eggs, and coconut flour for the filling.
4. Pour filling over the baked crust immediately after it’s done.
5. Reduce oven temperature to 325°F, bake bars for 20 minutes until set. Cool, then refrigerate for 4 hours.
6. Cut into 10 bars, garnish with powdered sugar and lemon zest before serving.
