Recipe of Samboosa, a traditional savory pastry popular in Saudi Arabia, especially during Ramadan. These triangular treats are typically filled with spiced meat, vegetables, or cheese, then deep-fried until golden and crispy. With origins tracing back to Central Asia and Persia, Samboosa has become a beloved part of Saudi iftar meals.

Cooking Time:
1 hour

Ingredients:

1 pack of samboosa wrappers (or spring roll pastry)
1 lb ground beef or lamb
1 small onion, finely chopped
2 tbsp oil or ghee
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp turmeric
1/4 tsp cinnamon
Salt and pepper, to taste
2 tbsp chopped parsley or cilantro
Oil for frying

Recipe:

Heat oil or ghee in a pan and sauté the onions until soft.
Add the ground meat and cook until browned and fully cooked.
Stir in the spices, salt, and pepper. Cook for another 2–3 minutes.
Remove from heat, mix in chopped herbs, and let the filling cool.
Take a samboosa wrapper, place a spoonful of filling at one end, and fold it into a triangle, sealing with a flour paste or water.
Repeat with the remaining filling and wrappers.
Heat oil in a deep fryer or pan. Fry samboosas in batches until golden and crispy.
Drain on paper towels.
