Recipe of Julienne, a classic Russian hot appetizer made with mushrooms, cream, and cheese, traditionally baked in small cocottes. Despite the French-sounding name, it’s a firmly Russian dish found in many Soviet-era and modern restaurants. Creamy, savory, and aromatic, it’s perfect as a starter or hearty snack.

Cooking Time:
40 minutes

Ingredients:

10 oz mushrooms (champignons or forest mushrooms), sliced
1 small onion, finely chopped
1 tbsp butter
1 tbsp flour
1/2 cup heavy cream
1/2 cup sour cream
1/2 cup grated hard cheese (e.g. Emmental, Gruyère, or Russian cheese)
Salt and pepper to taste
Optional: a pinch of nutmeg

Recipe:

In a skillet, melt butter and sauté the onion until soft and translucent.
Add mushrooms and cook over medium heat until all moisture has evaporated and mushrooms are golden.
Sprinkle flour over the mushrooms, stir well, and cook for 1 minute.
Pour in the cream and sour cream, stir until smooth and gently simmer for 5–7 minutes. Add salt, pepper, and nutmeg if using.
Transfer the mixture into small baking dishes or ramekins. Sprinkle cheese on top.
Bake at 375°F for 15–20 minutes, until the cheese is melted and golden.
