
Recipe of Pelmeni, a traditional Russian dish consisting of thin dough filled with seasoned meat. The word “pelmeni” comes from the Uralic word pel’n’an’, meaning “ear bread.” Originally from Siberia, pelmeni became popular throughout Russia for their convenience and hearty taste, especially in winter. Typically served with butter, sour cream, or vinegar.

Ingredients:
For the dough:
3 cups all-purpose flour
1 egg
3/4 cup cold water
1/2 tsp salt
For the filling:
1/2 lb ground beef
1/2 lb ground pork
1 small onion, finely grated
1 garlic clove, minced
Salt and black pepper, to taste
2 tbsp cold water
Recipe:
In a bowl, combine flour and salt. Make a well, add egg and water, mix until dough forms. Knead until smooth (10 minutes), wrap, and rest for 30 minutes.
For filling, mix both meats with onion, garlic, water, salt, and pepper until smooth.
Roll dough thinly and cut into 2-inch circles.
Place 1 tsp filling in each circle, fold in half, and pinch edges, then join tips to shape pelmeni.
Boil in salted water for 5–7 minutes until they float and meat is cooked.
