Ingredients:
1 cup spelt grains
4 cups vegetable broth
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 cup mushrooms, sliced
1/2 cup white wine
1/2 cup grated Parmesan cheese
2 tbsp. chopped fresh parsley
salt and pepper, to taste
Recipe:
1. In a medium pot, bring vegetable broth to a simmer.
2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
3. Add mushrooms and cook until they release their moisture and start to brown.
4. Stir in spelt grains and cook around 5 minutes, coating the grains with the oil and vegetables.
5. Add white wine and cook until it has mostly evaporated.
6. Begin adding the warm broth one ladle at a time, stirring frequently and allowing each addition to be absorbed before adding more. Continue until the spelt is tender and creamy, about 45 minutes.
7. Stir in Parmesan cheese with salt and pepper to taste. Garnish with fresh parsley before serving.
